Crispy Spicy Masala Toast (Garlic-Tomato Toast)
A super-crisp skillet toast topped with a jammy garlic-tomato masala—no onion, but still big flavor from garlic, hing, and warm spices. Think street-style masala toast: tangy, savory, and a little spicy, with browned edges and a soft center. It’s fast enough for breakfast or a snack, and scales easily for a crowd. Finish with cilantro and a squeeze of lemon for brightness.

Ingredients
- •4 slices sandwich bread (about 160 g)
- •2 tbsp butter or ghee (about 30 g)
- •1 tbsp neutral oil (about 15 g)
- •2 medium tomatoes, finely chopped (about 300 g)
- •3 cloves garlic, finely minced
- •1 small green chili, finely chopped (optional; use half for mild)
- •1/4 tsp asafoetida/hing (optional but recommended)
- •1/2 tsp cumin seeds
- •1/2 tsp Kashmiri chili powder (or paprika for milder)
- •1/4 tsp turmeric powder
- •1/2 tsp garam masala
- •3/4 tsp salt, plus more to taste
- •1 tbsp tomato ketchup (optional; for street-style tang)
- •2 tbsp chopped cilantro
- •1 tsp lemon juice (optional)
Instructions
Make the garlic-tomato masala
Heat the oil and 1 tbsp (15 g) butter/ghee in a skillet over medium heat. Add cumin seeds and let them sizzle and smell toasty, 15–30 seconds.
Add garlic (and green chili, if using) and cook 20–40 seconds, just until fragrant—don’t let it brown.
Stir in hing (if using), chili powder, turmeric, and a splash of water (about 15–30 ml) so the spices don’t scorch.
Add chopped tomatoes and salt. Cook, mashing as you go, until the tomatoes turn jammy and the oil starts to glisten at the edges, 6–10 minutes. If it ever looks dry, add a tablespoon of water.
Turn off the heat and stir in garam masala and ketchup (if using). Taste: it should be punchy and a little tangy; adjust salt and spice.
Toast and assemble
Spread the masala on one side of each bread slice in an even layer.
Heat a clean skillet or tawa over medium-low. Melt a little of the remaining butter/ghee in the pan.
Place bread masala-side up and toast the plain side first until deep golden and crisp, 2–4 minutes (you’ll smell nutty butter and see the edges firm up).
Flip and toast masala-side down briefly, 30–60 seconds, just until the masala surface dries slightly and picks up a few browned spots (don’t burn the garlic).
Finish with cilantro and a few drops of lemon juice. Serve hot while the edges are crackly.
Notes
No-onion flavor boost: hing + garlic + longer tomato cook time gives the savory depth onions usually provide. Mild version: skip green chili and use paprika instead of Kashmiri chili powder. Crispier toast: use slightly stale bread and toast a touch longer on the first side. Make-ahead: the masala keeps 3–4 days refrigerated; rewarm until glossy before spreading. Dairy-free: use vegan butter or extra oil instead of butter/ghee.
