  • •Black pepper: 0.5 g (about 1/4 tsp)
  • •Water: 30–60 g (2–4 Tbsp), to thin as needed
  • •Toasted sesame seeds (optional): 6 g (1 Tbsp)
  • •Red pepper flakes or chili crisp (optional): 2–10 g (1/2 tsp–2 tsp)

Blend

Add the chopped carrot, apple, rice vinegar, ginger, garlic, toasted sesame oil, neutral oil, honey (or sugar), salt, pepper, and 30 g water to a blender.

Blend on high until very smooth, 30–60 seconds. Scrape down once. The dressing should look glossy and lightly thick—like a pourable smoothie.

Adjust (make it punchy, not harsh)

Taste. You want it slightly too bright in the blender—once it hits rice and salmon it mellows. If it tastes flat, add a small pinch of salt. If it’s too sharp, add 2–5 g more honey/sugar. If it’s too thick, blend in more water 15 g at a time.

If using, stir in sesame seeds and red pepper flakes (or blend in chili crisp for a smoother heat).

Serve

Drizzle generously over salmon, vegetables, and rice bowls. It’s best after 10 minutes of rest (the ginger and garlic bloom), but it’s great immediately.

Tip: For extra punch without lemon, add 5–10 g more rice vinegar or a pinch more salt—acid and salt work as a pair.

Notes

Storage: Refrigerate in a sealed jar up to 5 days; shake before using (it may separate slightly).

Make it creamier: Blend in 30–60 g mayo or plain unsweetened yogurt (won’t be vegan anymore if using dairy).

Make it more sesame-forward: Increase toasted sesame oil to 15 g (1 Tbsp) and reduce neutral oil to 25 g.

No blender: Finely grate carrot and apple on the small holes of a box grater, then whisk hard; texture will be looser and more rustic.

Pairs especially well with: pan-seared salmon, roasted broccoli, sautéed greens, cucumbers, or shredded lettuce.
