Ramen-Packet Tofu Meatball Vermicelli Soup with Lettuce & Egg

A quick, comforting hybrid noodle soup built on your ramen seasoning packet, then rounded out with ginger, garlic, soy, and a touch of vinegar for a clean, savory broth. Extra-firm tofu adds body, chicken-tofu meatballs make it hearty, vermicelli turns it into a full meal, and lettuce goes in at the end for fresh crunch. Finish with a softly set egg for richness. Great for a fast weeknight bowl when you want something warming but not heavy.

Ingredients

  • 1 ramen soup seasoning packet (already in the pot)
  • 1000 ml water
  • 15 ml soy sauce (I'm assuming you have this — let me know if not and I'll swap it out)
  • 10 ml rice vinegar or mild vinegar (I'm assuming you have this — let me know if not and I'll swap it out)
  • 5 ml sesame oil (optional)
  • 8 g fresh ginger, thinly sliced or grated
  • 2 cloves garlic, smashed or minced
  • 1–2 g sugar (optional, to round flavors)
  • 200 g extra-firm tofu, cut into 15–20 mm cubes
  • 250 g chicken-tofu meatballs
  • 100 g dry vermicelli noodles
  • 2 large eggs
  • 120 g lettuce, torn into bite-size pieces (romaine, napa, or iceberg)
  • 10 g scallions, sliced
  • chili crisp or chili oil, to taste
  • black pepper, to taste

Instructions

  1. Bring the pot with the ramen seasoning and 1000 ml water to a lively simmer. Add ginger and garlic; simmer 5 minutes until the broth smells sharply aromatic.
  2. Stir in soy sauce, vinegar, and (if using) sugar and sesame oil. Taste: it should be savory with a little lift. If it tastes flat, add a tiny splash more vinegar; if it tastes harsh, add a pinch more sugar.
  3. Add the chicken-tofu meatballs and simmer gently until they’re hot through and the center is no longer cool (about 5–8 minutes, depending on size).
  4. Add the cubed extra-firm tofu and simmer 2 minutes—just enough to heat it without breaking it up.
  5. Add vermicelli and cook until just tender and no longer chalky in the center (typically 2–4 minutes). Keep the simmer gentle so the noodles don’t cloud the broth too much.
  6. Crack eggs into a small bowl. Swirl the soup in one direction, then drizzle in the eggs in a thin stream for ribbons, OR slide them in gently for poached eggs. Cook until whites are set and yolks are as you like (1–3 minutes).
  7. Turn off the heat. Add lettuce and push it under the hot broth for 20–30 seconds—aim for bright green and lightly wilted, not limp.
  8. Ladle into bowls, making sure each gets noodles, tofu, meatballs, and egg. Finish with scallions, chili crisp, and black pepper if you want.

Notes

Substitutions: If you don’t have soy sauce, use a small pinch of salt plus a little extra vinegar; taste carefully because the ramen packet is already seasoned. If you don’t have rice vinegar, use apple cider vinegar or lemon/lime juice. For a clearer broth, cook vermicelli separately and add to bowls. Storage: Keep noodles separate if possible; they drink broth as they sit. Reheat gently—avoid hard boiling so the egg stays tender.
