  • •3–4 tbsp sugar
  • •1/4 tsp kosher salt

Instructions

Make the coconut sauce

In a small saucepan over medium heat, whisk together the coconut milk, sugar, and salt. Heat until steaming and the sugar dissolves; do not boil hard.

If using cornstarch, whisk it with 1 tbsp cold water in a small cup, then whisk into the hot coconut milk. Simmer 30–60 seconds until the sauce looks slightly thicker and glossy.

Coat the rice

Add the warm cooked rice to the saucepan. Fold and stir gently for 2–4 minutes until the rice looks creamy, clumps slightly, and the pan is mostly not watery. You’re looking for spoonable and glossy, not soupy.

Turn off the heat, cover, and let stand 5 minutes to absorb and “set.” The rice should mound on a spoon and look shiny.

Serve

Spoon rice into bowls or ramekins, top with sliced mango, and finish with sesame seeds or nuts if you like. If you want it richer, drizzle a little extra coconut milk over the mango; if you want it brighter, add a tiny squeeze of lime.

Tip: If your rice is cold, splash in 1–2 tbsp water before heating so it loosens, then let the coconut sauce thicken it back up.

Notes

Texture note: Regular rice won’t become stretchy like glutinous (sweet) rice; the cornstarch trick and brief covered rest help it clump and feel closer to classic. Best rice choice is jasmine; avoid very firm, dry rice. Make-ahead: keep rice and mango separate; rewarm rice gently with a splash of coconut milk or water.
