Spicy Garlic-Chili Turkey & Chinese Eggplant Rice Bowls
A weeknight stir-fry that eats like your favorite takeout bowl: browned ground turkey, silky Chinese eggplant, and zucchini in a glossy garlic-chili sauce. Ingredients

- •300 g jasmine rice (or other white rice), rinsed
- •450 g water
- Stir-Fry
- •450 g ground turkey
- •450 g Chinese eggplant, cut into 2.5 cm chunks
- •200 g zucchini, cut into 2 cm half-moons
- •20 g neutral oil (plus 5–10 g more if needed)
- •20 g garlic, finely minced (about 6 cloves)
- •15 g ginger, finely minced
- •30 g scallions, sliced (whites and greens separated)
- Spicy Garlic-Chili Sauce
- •60 g low-sodium soy sauce
- •25 g chili-garlic sauce (or sambal oelek)
- •15 g rice vinegar
- •10 g sugar
- •10 g cornstarch
- •120 g water
- •5 g toasted sesame oil
Instructions
Cook the rice
Combine the rinsed rice and water in a pot, bring to a boil, then cover and reduce to low. Cook until the water is absorbed and the grains are tender, 12–15 minutes.
Take off the heat and rest, covered, 10 minutes. Fluff.
Mix the sauce
In a small bowl, whisk together soy sauce, chili-garlic sauce, rice vinegar, sugar, cornstarch, water, and sesame oil until smooth.
Stir-fry the turkey and vegetables
Heat a large skillet or wok over medium-high until a drop of water sizzles hard and evaporates quickly. Add the oil.
Add turkey and spread it out. Let it brown undisturbed 2 minutes, then break up and cook until mostly cooked through with some browned bits, 4–5 minutes total.
Push turkey to the sides; add scallion whites, garlic, and ginger to the center with a tiny splash more oil if the pan looks dry. Stir 20–30 seconds until very fragrant (don’t let garlic brown).
Add eggplant and zucchini; toss to coat. Cover and cook 3–5 minutes, stirring once or twice, until the eggplant starts to collapse and turns glossy.
Uncover, give the sauce a quick re-whisk, then pour it in. Toss and simmer 1–2 minutes until the sauce turns shiny and coats everything; the eggplant should feel soft and “jammy” when pressed.
Kill the heat and fold in scallion greens.
Serve
Spoon over hot rice. Taste and punch up with an extra 5–10 g chili-garlic sauce if you want it hotter.
