Crispy Veg Rösti (Potato & Carrot Pancakes)
These crispy veg rösti are thin, golden potato pancakes studded with carrot and onion for sweetness and crunch. They’re pan-fried until shatteringly crisp on the outside and tender inside—perfect for a fast breakfast, snack, or light dinner. A simple mix of cumin, black pepper, and a touch of garam masala keeps the flavor warm and savory without being spicy. Serve with yogurt, ketchup, or a tangy chutney.

Ingredients
- •500 g potatoes (starchy if possible), peeled
- •120 g carrot, peeled
- •80 g onion, thinly sliced or grated
- •8 g salt (about 1 1/2 tsp), plus more to taste
- •2 g ground cumin (about 1 tsp)
- •1 g black pepper (about 1/2 tsp)
- •1 g garam masala (about 1/2 tsp), optional
- •15 g cornstarch (about 1 1/2 Tbsp) or 20 g besan (chickpea flour)
- •30 g neutral oil or ghee for frying, more as needed
- •10 g butter (about 2 tsp), optional (for extra crisp and flavor)
- •10 g lemon juice, optional (to serve)
- •Yogurt or chutney, to serve
Instructions
Prep the vegetables
Grate the potatoes and carrot on the large holes of a box grater (or use a food processor). Grate the onion too, or slice it very thin.
Put the grated potato/carrot/onion in a bowl, sprinkle with the salt, and toss well. Let it sit 8–10 minutes; you’ll see liquid start to pool.
Squeeze hard: grab handfuls and wring out as much liquid as you can into the sink. (Drier mix = crispier rösti.) Return the squeezed veg to the bowl.
Mix and shape
Add cumin, black pepper, and garam masala (if using). Sprinkle in cornstarch (or besan) and toss until everything looks lightly coated and the shreds start to cling together.
Form 6–8 patties, about 1–1.5 cm thick. Press firmly so they hold.
Pan-fry until deeply crisp
Heat a wide skillet over medium-high heat. Add enough oil to coat the bottom (about 10–15 g). When the oil shimmers, add 3–4 patties and press them down with a spatula.
Fry 3–5 minutes per side, adjusting heat as needed: you want a steady sizzle. Flip when the edges look deeply golden and the underside releases easily. The finished rösti should be dark golden-brown with crisp, lacy edges.
Optional for extra flavor: add a small knob of butter near the end and baste the patties for 30–60 seconds.
Drain briefly on a rack or paper towel. Taste and add a pinch of salt if needed.
Serve
Serve hot with yogurt or chutney, and a squeeze of lemon if you like.
